Hi All! Hope you had a good weekend. I'm still struggling to enjoy menu planning. Do you ever have that issue? For now, I'm still keeping it simple - I've got a lot going on these days and just need to focus on easy warm food that doesn't take too much prep work. Here's what ended up on my menu this week -
Monday: Wild Rice Soup with Chicken Breast & Toast
- I made enough to freeze half for a second meal in a few weeks
Tuesday: Cold Sandwiches, Fruit, Salad
- we have a school concert to attend so it's a meal on the run for us
Wednesday: Burgers, Fries, Fruit or Veggies with Dip
Thursday: Taco Soup, corn bread or bread sticks
Friday: Pancakes and Eggs
Saturday: Loaded Potato Soup with Salad
Sunday: Leftovers
