It's a busy week at our house with school and sports activities. The only night we have nothing planned yet is Saturday. These are the weeks that are most challenging for me, even with a menu plan. The drive thru is just so much easier, but so much more expensive and not at all good for us. How do you handle those busy weeks were you feel like you are running every night? Monday: Salmon, Rice, Green Beans
Tuesday: On the road for a volleyball match - planning to pack cold "lunch" for supper
Wednesday: Tortilla Egg Roll-ups, Fruit
Thursday: Squash Soup, Grilled Cheese, Salad
Friday: Pizza Ranch after soccer with friends - anyone know where I can find a coupon?
Saturday: Chip Hotdish (aka Taco Casserole), Corn
Sunday: Round Steak & Mushroom Gravy, Noodles, Vegetable
You'll notice I don't put Saturday on my menu and I only have one meal a day planned. My kids are old enough to get their own breakfast and I keep plenty of cereal or bagels or waffles on hand. We are all at work or school during the day Monday - Friday. We also tend to eat whatever is in the frig for Saturday meals and Sunday lunches. Occasionally I'll come up with something, but it's not usually planned. Right now, this is working for us.
